| Lemon Posset |
500g double cream
150g caster sugar
Juice and zest of 1 lemon
Juice 1/2 orange
- Mix all ingredients together in a tall saucepan.
- Start at a low heat until all the sugar is dissolved.
- Turn up the heat
- Bring the pan to a 'rolling' boil, don't be scared just avoid it bubbling over the top of the pan
- Strain through a fine sieve and cool in the fridge.
These can be served in a glass or as we do... a nice dollop on a plate with some lavender honey & some berries. Super quick and easy for those stressful dinner parties!
